Tortilla Night!

     Made an easy, wonderfully yummy, meal tonight.  Chicken tortilla soup, with homemade tortilla chips.
     The soup is so good, and so easy.  In a saucepan I sauteed, green onions, a tomato, and garlic.  I added some chopped up chicken, salt, pepper, and chili powder.  You don't have to, but I add corn and black beans.  How can you not add them?!  Simmered for 20 minutes (or however long it took to give Marshall a bottle).  It is just that easy.
     I had never made tortilla chips before tonight and had no idea that it was so simple.  I cut up three tortilla, (more than enough for two people), and put them in a bowl.  You then add a small amount of olive oil, whatever spices you like, and mix together with your hands.  I used paprika and sea salt.  Bake for 5-7 minutes at 400 degrees.  Perfect for dipping in my tortilla soup!
     Yay for Tortilla Night!

     Now my next thought is to use cinnamon and sugar on the chips.  With a little sugar cream cheese drizzle, ah, perfection!

Little Men

     I've been working on some cute things to sell for little boys.  I love the paisley for a little gentleman!
     I plan on making a ton of these and selling them so if anyone is interested in purchasing, let me know.  They can also be customizable.

Not So Strawberry Muffins

     It appears I'm in love with muffins.  Especially skinny ones.  Here's an awesome, fruity, chocolatey, low cal muffin recipe.
     I found this recipe and it was intended to be for strawberry muffins, but when I got to the strawberry part, I realized I didn't have any.  This is a very common occurrence in my house, I start a recipe without all the ingredients, so I added raspberries instead.
     It's so good when you bite into a very filling muffin, and you get chocolate and a huge raspberry in your bite.  These are filling muffins, very dense.

I mixed…
1 and 1/4 cup flour
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 cup granulated sugar
1/4 cup brown sugar
1/2 cup applesauce
1 beaten egg
1 cup of raspberries, or strawberries, or whatever you fancy
chocolate chips


Mix dry, then mix wet.  Combine and fold in fruit and chocolate.  Bake for 17 minutes at 350.

You can freeze half the batch so they last longer.  Mine were just too good though and barely lasted a few days!

The Sew Must Go On

     While shopping for dress fabric, I found something cute to display my new love of sewing.  Love this skirt!


Dress

     I decided to try and take on a dress project yesterday.  I bought some cute fabric and liner, then went to town.
     I tried to work off a pattern online and the measurements were terrible.  So, I made my own pattern, and just adjusted as I went.
     I put some pleats in the top to make it fit better and pleated the whole skirt.  Then just attached them to each other.  I'm happy with the outcome.  Week two of sewing is a success.

     This dress would be cute with pockets.
